And don’t worry: this recipe is quick, easy, and tasty. With only a few simple ingredients, you’ll be able to whip everything up in about 30 minutes.

“Kale del Sur” Bowl

This dish blends hearty ingredients with classic south-of-the-border flavors, providing tons of nutrients without sacrificing any taste.

Ingredients:

• 2 Cups of Brown Rice

• 2 Cans of Black Beans

• 1 Bag of Frozen Kale

• Cumin

• Olive Oil

• 1 Tablespoon of Minced Garlic

• Red Pepper Flakes

• Hot Sauce

• 1 Avocado

• Queso Fresco (Optional)

• Sour Cream (Optional)

 

Directions:

Bring a pot of water to a boil, then cook the rice according to your package’s instructions. It should be tender and fluffy when it’s finished—this typically takes about 20 minutes.

Then, in a sauté pan, heat the oil and garlic until fragrant. Stir-in the kale until it’s wilted, and mix-in the black beans after. Add cumin, salt, red pepper flakes, and chili powder to taste. Allow the mixture to cook for about five minutes, then cover and remove from heat.

When your rice is ready, blend-in the bean mixture. Serve on a large plate, then top with queso fresco, hot sauce, and sour cream. Finish it up by slicing and placing an avocado on top. Serves two.

 

Strawberry Margarita

Now that the food’s ready, it’s time to make a tasty drink. This one’s pretty simple—it requires fruit and a few basic ingredients.

Ingredients:

• 2 Cups of Frozen Strawberries

• 1 Lime

• Salt

• Sugar

• Triple Sec

• Tequila

• Ice

 

Directions:

Grab your favorite blender and add a little bit of ice. Place the strawberries on top of the ice, then sprinkle sugar on the mixture. Squeeze half a lime into the blender, then add one measure of triple sec and four measures of tequila.

When that’s all set, blend the mixture and serve in a fun glass. Add lime juice and salt around the rim for an extra dash of flavor. Serves two.
